A History tab records every move in both directions with who did it and when, so "who took the customer list" has an answer.
Exports page through the data and stop when the server runs out of rows, and an export that is capped says so on the card and in the file name.
A spreadsheet treats a cell starting with = + - or @ as a formula, so a value typed into one of your public forms could otherwise run as code the moment you opened the export. Those values carry a leading apostrophe, which spreadsheets hide and strip. The data underneath is unchanged.
